From Fermentation to Flavour: Jack's Easy Guide to Making Healthy Kimchi

A couple of detailed point to know:

Once you've put the cabbage in the brine you leave it over night.

When you drain the cabbage the next day keep the brine and use it to top up the burping jar once you've packed the vegetables in.


2 tbsp sea salt

1L water

1 chinese leaf cabbage (napa cabbage)

2 carrots, grated

1 bunch spring onions

100g radishes

100g fresh ginger

6 large garlic cloves

2 red chillies

2 shallots

1-3 tbsp Korean chilli flakes or cayenne pepper

2 tbsp tamari (optional)
